Whole30x2: Day 12

This weekend has slipped away from me, with much left undone. In times past, I would have just stayed up for another couple of hours and dashed off a quick essay, but a big part of this Whole30 process is the attempt to get adequate sleep with regular hours. It’s after 1:00 a.m., past my bedtime, so it’s just photos tonight.

Here are my food photos for day 12:

Sunday, Jan. 26

I woke up at 10:10 a.m. (after heading to bed at 1:20 a.m.).

Breakfast: 11:45 a.m. | 8 oz. ground beef, 1/2 oz. calf liver, 1 1/2 beets, 1/2 red onion, 4 cloves garlic, 2 Tbsp. coconut oil, herbs & spices

Leftovers from last night’s dinner.

Breakfast: 11:45 a.m. | 8 oz. ground beef, 1/2 oz. calf liver, 1 1/2 beets, 1/2 red onion, 4 cloves garlic, 2 Tbsp. coconut oil, herbs & spices

Lunch: 4:00 p.m. | 4 oz. prosciutto, 2 oz. kale chips, 1 Tbsp. Nuttzo nut butter

Lunch: 4:00 p.m. | 4 oz. prosciutto, 2 oz. kale chips, 1 Tbsp. Nuttzo nut butter

Dinner: 9:55 p.m. | 8 oz. salmon, 3 eggs, 1/2 oz. calf liver, 1 oz. baby kale/spinach/chard/beet greens mix, 2 Tbsp. coconut oil, herbs & spices

The plate below constitutes about half of what I made at dinnertime, and I saved the non-pictured half for breakfast.

Dinner: 9:55 p.m. | 8 oz. salmon, 3 eggs, 1/2 oz. calf liver, 1 oz. baby kale/spinach/chard/beet greens mix, 2 Tbsp. coconut oil, herbs & spices
